They’re not kidding about the non-stick part
Normally, I wouldn’t have much to say about baking pans one way or another, unless to complain about one being flimsy or baking unevenly. As that’s not the case with Fat Daddio’s pans, I originally didn’t intend to post a review.
But last week, my roommate convinced me to make Igor bars for his birthday. Igor bars, if you’re not familiar with them, are a layered dessert with chocolate chip cookie dough on the bottom, caramel, and rice krispie treats. They’re gooey and sticky and after hours spent slaving in the kitchen, I about died when I realized that I’d forgotten to grease the pan into which I’d just finished layering my caramel-y, marshmallow-y creation. Time came to cut the thing and serve it, and I was sure we’d have a horrible mess on our hands.
Not so. The Igor bars, caramel, marshmallow, stickiness and all came out without even leaving much residue behind.
The next time I need to buy baking pans, I’ll be coming back to this company…
commercial grade cake pan
These pans are a very nice weight. The sides go straight up to form a nice edge. These will probably last me my lifetime.

This is my first time using a Fat Daddio cake pan, but their fondant roller pin is nice and heavy. Based on review research, I chose this pan over Wilton.
I was a bit fearful of making such a large cake and getting it to cook evenly, so I also bought the insulating strips and a flower nail to ensure even cooking. I have yet to use it without these accessories, because I can’t afford to make a mistake with a cake! I wet the insulating strips (wilton, and per instructions) and pin them in place around the pan, then spray a large flower nail with baking spray and place flat side down in the middle. Cakes come out wonderfully evenly cooked, and no doming in the middle! They were so even across the top I didn’t have to level it at all. Well, once I did, but it wasn’t by much. Two standard cake mixes will give you quite a nice thick cake as well. I think if you were to use the pan by itself, it would still cook evenly.
The nice feature is it’s durable…
