I own several Parrish Magic pans in various sizes. I consider them my BMW of pans. My daughter who went to culinary school (Alton Brown in class) introduced me to them. They are excellent quality and produce outstanding results. I love the straight edges. These are heavy duty pans made to last a life time.
Parrish Magic Line Pan
I am a new baker learning as I go. I haven’t actually used this pan, but my research may be helpful to others. I was looking for a baking pan with a small lip which is what is recommended for bicuits. Initially, I thought two 11 x 16 inch pans would be best to fill the oven rack which is about 16 x 23 inches. Later I learned that you need the air to circulate around the pan, so you should leave a couple of inches of space or so around each side. Thus I settled on a half sheet pan. I think those of you looking for a high quality baking pan will gravite toward this one or the Wear-Ever Half Size Natural Finish Aluminum Sheet Pan, 17-3/4×12-7/8×1 First, let me say that this one appears to be beautiful with clean lines and a modern look. Best cookie sheets ever. Bought the cake pan as well — and absolutely love these pans. I’m ready to throw out the other pans and buy a few more.
