Best of Both Worlds
I am a SOURDOUGH BREAD BAKER, and have coveted a SASSAFRAS bread baker for a very long time. Budget and inability to decide if I wanted the cloche or “loaf”-type version, I put off the purchase. I am so pleased I did!
I vacillated between the cloche and rectangular covered bakers because I wanted the round shape the cloche allowed, but ALSO the higher sides for shape that the rectangular baker provided. Then, I see THIS ITEM (Superstone Bread Dome) and was SUPER EXCITED. It was EXACTLY WHAT I WANTED; it had the round shape AND higher sides on the bottom portion.
This was a NEW PRODUCT (or, at least to me, as I’d never seen it before), and I was EAGER to buy. The PRICE was HIGHER than I really wanted to PAY, but since it was a SUPER SAVER SHIPPING item, I went for it. I am happy to report that I LOVE THIS BREAD BAKER! So do my friends, family, and (school) faculty who’ve benefited from the deluge of bread baked since.
I really ENJOY the EASE of BAKING…
Works, but not the most practical solution
The bread dome works as advertised and produces a nice loaf of artisan bread. After trying out different things I have come to the conclusion though that it is not the ideal vessel for bread baking. I have found that enameled cast iron dutch ovens are much more practical. What crust and crumb are concerned, the results are identical, I can’ t find any difference in tatse and texture between a loaf baked in the clay baker and one baked in a dutch oven.
The single biggest advantage of a dutch oven over the clay baker is that you can bake a loaf in it that has been proofed in the fridge. It doesn’ t need to be at room temperature, it can go from the fridge directly into the preheated dutch oven. This results in a very nice oven spring, and the cold dough is much easier to handle and holds it’s shape much better than a dough at room temperature.
